Eduardo Morales makes the tortilla flower.
Helena and Eduardo Morales, owners of Los Comales Morales, an artisan tortilla business.
Helena and Eduardo are both of Mexican descent, she grew up in Manitoba, while Eduardo moved here from Mexico City in 2006, after the two of them met through a friend.
Eduardo missed the taste of authentic, corn tortillas so he bought an industrial tortilla maker in 2018, and began ordering non-GMO, organic corn flour from a distributor in Iowa, expressly to make tortillas for family and friends. But since he was required to buy one ton of flour, per order, he started thinking maybe others would enjoy their tortillas, too; the business launched in August, 2023.
