Ruth Bonneville / Free Press Standup Egg Crackers Jan Ligan (left) and his workmate, Zach Valeza (glasses), have their work cut out for them each Monday at Piazza De Nardi as they crack almost 1500 eggs that are the staple item for many of their sponge cakes and pastry items they prepare for the week. During special holiday periods, like Easter and upcoming Mother's Day, they will crack 3 times the amount of eggs, so up to 4,500 eggs in preparation for their bakers. When the photographer asked Jan what his title was he responded, "Egg Cracker! That'll be my new title" he jokingly replied while laughing with his co-worker Zach. April 29th, 2024
